As Puratos, in México, continues its growth journey across the country, we are in search of hiring the following position:
**R&D Manager - Bakery**

Your Mission: Responsible for the portfolio of the bakery business unit, which includes: mixes, improvers, and enzymatic cores, according to the needs of the supported channels (Artisans and Distributors, Industry, Semi-Industry, Retail, Food Service, and Bakery Chains, including industrial clients and supermarkets).

Activities: Research, development, and localization of portfolio products for the local market, based on existing technologies or new launches that ensure the expected performance for customers. This involves ensuring excellent execution throughout the various stages of the innovation process, including ideation, conceptualization, laboratory testing, pilot plant trials, and industrial-scale production. Also responsible for technical support follow-up with internal and external clients, related to the performance of the proposed solutions and any potential claims.

What you will do
- Manages product innovation for the bakery business unit.
- Oversees the development of new products within the bakery product range.
- Provides technical-commercial support in the development of customer innovations (Artisans and Distributors, Industry, Semi-Industry, Retail, Food Service, and Bakery Chains), identifying potential business opportunities alongside the commercial manager.
- Technical lead for the launch of new products (formulation, scaling, quality standards, and process).
- Responsible for the industrial scaling of new products, followed by transfer to the manufacturing team and monitoring of quality issues.
- Technical administration: product technical specifications, creation and management of formulations in SAP, code creation, label validation, cost validation at the ingredient and primary packaging level, etc.
- Maintains optimal formulation in terms of performance and cost through exploration of new ingredients, optimization of production processes, and logístical efficiencies.
- Provides technical support and training to the sales, marketing, and operations teams.
- Designs, coordinates, and executes experimental test matrices for finished bakery products in the laboratory.
- Ensures confidentiality of formulas, intellectual property, patents, and knowledge protection in accordance with Group policies.Manages work teams and budget creation for the bakery area at both CapEx and OpEx levels.

What Puratos expects from you
- Preferred degree: Degree in Food Engineering, QFB (Pharmaceutical Biologist Chemist), LQA (Food Quality Laboratory) or related field.
- 5 to 10 years of experience in Bakery, with project management and technical knowledge of formulas and technology.
- Knowledge of : SAP, Minitab, Project Management, DNP, Design Thinking, Enzymatic Technology, Fermentation Processes, Regulations related to food manufacturing, labeling, safety, and hygiene
- Passionate about innovation and food
- Good communication, planning and organization skills.
- Pragmatic and result oriented
- Language skills: advanced English
- Travelling involved: up to 20%Availability to visit clients 35% of the time.
