Executive Sous Chef Lead

Job Description: As an Executive Sous Chef at AccorHotels, you will be responsible for overseeing daily kitchen operations, managing staff, and maintaining high food quality standards. Key duties include:
Administration: * Requisitioning of F&B products
* Market list management
* Attendance records maintenance
* Sick leave and annual leave requisitioning
* Daily log book upkeep
* Petty cash management
* Expenses claim form handling
* General Purchase Requisition management
* Medical form processing
Customer Service: * Ensure guests receive exceptional service meeting Novotel standards
Financial: * Responsible for all food product-related costs
Operational: * Assist in planning menus that are innovative and creative, aligned with current market trends
* Prepares cold and hot dishes, desserts, and other foods
* Maintains proper Asian food quality according to standardized company procedures
* Requisitions necessary food items from the store room
* Prepares advance preparation for the next day and shift
* Maintains a clean and orderly work area
* Attends kitchen meetings and training as required
* Expected to carry out reasonable requests by Management within capabilities
* Understands job descriptions of working colleagues
* Supervises and assists in total food production
* Attends Chef's meetings when required
* Regularly reports needed maintenance to the Executive Chef/Engineering
* Is well-groomed and takes care of personal hygiene
Personnel: Establish rapport among co-employees at all levels and provides training
Other Duties: Perform any assigned duties as may be requested from time to time
Occupational Health & Safety: Safeguard health and safety, and the health and safety of others, in the workplace
