Executive Sous Chef Role Summary
The Executive Sous Chef is a key member of the Food and Beverage team at Rosewood Mandarina, responsible for ensuring the smooth operation of the kitchen and maintaining high standards of quality, cost, and safety. This role requires a strong leader who can manage a team of sous chefs, coordinate daily and seasonal menu planning, and oversee food ordering and inventory control.
Key Responsibilities
- Conduct daily kitchen walk-throughs to inspect equipment and facilities.
- Oversee food ordering and inventory management to ensure compliance with predetermined specifications.
- Collaborate with outlet managers, executive steward, and sous chefs to discuss daily operations and address pending items.
- Supervise sous chefs and their cross-training, ensuring effective team management.
- Participate in weekly function event order reviews and production schedule organization.
- Implement safety standards and training guides for kitchen equipment operation.
- Maintain observance of health standards and installation of health standards for food production.
- Manage labor costs and variable line items related to food production budget.
Required Skills
- Strong attention to detail, speed, and accuracy in performing job functions.
- Effective project management experience in organizing, planning, and executing large-scale projects.
- Excellent communication and leadership skills for presenting and discussing technical information.
- Knowledge of hotel/resort operations management, including quality, operations, and marketing/sales principles.
- Fluency in English and Spanish for effective communication with guests and colleagues.
Qualifications
- Formal culinary training or equivalent combination of education and work-related experience.
- Minimum eight years of overall culinary experience, including at least two years in an Executive Sous Chef position in a luxury or ultra-luxury hotel or restaurant.
